Peel eggs. Dust damp eggs with flour. With floured hands, pinch off enough sausage to completely wrap each egg. Set aside. Make a batter with 1 beaten egg, 1/2 cup milk, 1 1/2 tsp ginger, salt, pepper, and 2 Tbsp flour. Dip eggs covered in sausage into batter. Then drop eggs into deep hot oil. Fry until golden brown.
