B and B Relish

Ingredients:
  • 13 lbs Green tomatoes; cut in-chunks
  • 7-1/2 lbs Onions; chopped
  • 3-1/4 lbs Green and red bell peppers;-chopped
  • 6 Hot peppers (optional)
  • 2-1/2 Tbsp Salt
  • 6 cup Sugar
  • 1-1/4 tsp Black pepper (optional)
  • 2 tsp Mixed pickling spice; tied-in a cheesecloth bag
  • 7 cup Vinegar

Preparation:

Put all ingredients in a large kettle. Stir well. Boil 15 minutes. Remove spice bag. Put in hot, sterile jars. Seal.

NOTE: For mild relish, use only 1 hot pepper and omit the black pepper. NOTE: Get a book on canning if unsure about sealing and processing.

Servings: 16 pints
