Colorful Beet Relish

Ingredients:
  • 1 ct (8 oz.) sour cream
  • 3 Tbsp Horseradish
  • 2 Tbsp Red wine vinegar
  • 2 tsp Sugar
  • 1/2 tsp Dry mustard
  • 1/4 tsp Salt
  • 1/4 tsp White pepper
  • 1 can (16 oz.) cut beets; drained, diced

Preparation:

Combine all ingredients except beets, mixing well. Fold in beets. Cover and chill. Serve with roast beef.

Servings: 2 cups
