Confetti Relish Mold

Ingredients:
  • 2 Beef bouillon cubes
  • 1 pk (3 oz.) lemon gelatin
  • 1 cup Boiling water
  • 2 Tbsp Tarragon vinegar
  • 1/2 tsp Salt
  • 1 cup Sour cream
  • 1/2 cup Chopped cucumber; unpeeled
  • 1/4 cup Green pepper; finely chopped
  • 1/4 cup Sliced radishes
  • 2 Tbsp Sliced green onions

Preparation:

Dissolve bouillon cubes and gelatin in boiling water. Add vinegar and salt. Chill until mixture is partially set. Add sour cream; beat until smooth.

Add remaining ingredients and pour into a 3-cup mold. Chill until mixture is firm.
