Cranberry-Mango Relish

Ingredients:
  • 1 cup Fresh cranberries
  • 1 large Mango
  • 3 Tbsp Red onion; finely diced
  • 1 Tbsp jalapeños pepper; minced
  • 1/4 cup Cilantro; coarsely chopped
  • 1/4 cup Fresh lime juice
  • 1 Tbsp Honey
  • 1 Tbsp Ground pepper

Preparation:

Simmer cranberries in water to cover until they pop, about 10 min. Drain. Peel the mango; seed and coarsely chop.

In a medium bowl, combine cranberries with mango, onion, jalapeño, cilantro, lime juice and honey. Season to taste with freshly ground pepper.

Cover; refrigerate for up to 1 day. Bring to room temperature before serving.

Servings: 2 cups
