Cranberry Port Relish

Ingredients:
  • 3 cup (12 oz. pkg) fresh orfrozen cranberries
  • 1 medium Onion minced
  • 1/3 cup Cider vinegar
  • 1 cup Golden raisins
  • 1 cup Sugar
  • 1-1/2 cup Port
  • 1/2 tsp Ground nutmeg
  • 1 tsp Ground ginger
  • 1 tsp Ground cinnamon

Preparation:

Combine all ingredients except cranberries in heavy saucepan. Bring to boil then simmer for 15 minutes.

Add cranberries and simmer another 20-30 minutes. Towards the end the relish gets very thick. Make sure you stir it often, since it will stick to the pan.
