Combine peaches and lemon juice. Thoroughly mix sugar into the fruit and let stand for 10 minutes. Mix water and fruit pectin in a small sauce pan and boil for 1 minute, stirring constantly.
Stir into fruit and continue stirring for about 3 minutes. Use 5 - 8 oz. jars or plastic containers with snap lids. Cover right away and let stand at room temperature for 24 hours to set.
Keep what you can eat in the refrigerator and freeze the rest.
