Take one gallon of plums, drop into a granite kettle, cover with cold water, add 1 Tbsp of baking soda, set on the stove and let boil until the plums crack open.
Then drain off the water, take out the seeds and replace plums on the stove with a little water. Let boil five minutes, then add four pints of sugar and let boil twenty minutes more.
If you would prefer the plums whole, make a syrup of the sugar and drop the plums in without taking out the seeds. Let simmer till done, or the syrup will jell.
