Zucchini Jam

Ingredients:
  • 6 cup peeled zucchini
  • 8 oz. can crushed pineapple
  • 1/2 cup lemon juice
  • 6 cup sugar
  • 2 - 3 oz. pkg. apricot Jell-O

Preparation:

Boil zucchini until soft. Add pineapple and boil. Add lemon juice and sugar and boil for 20 minutes. Remove from heat and add apricot Jell-O.

Put in hot, sterilized jars, can be stored on shelf or refrigerator.
