Glazed Lamb Chops

Ingredients:
  • 6 lamb loin chops, 1 inch thick (about 1-1/2 lbs)
  • 1/4 cup apricot spreadable fruit
  • 2 Tbsp red wine vinegar or cider vinegar
  • 2 Tbsp Dijon mustard
  • 1/2 tsp reduced-sodium soy sauce
  • 1/4 tsp pepper

Preparation:

Trim fat from lamb chops. Mix remaining ingredients. Brush lamb with 1/3 cup apricot mixture; reserve remaining mixture. Let stand 20 minutes at room temperature or cover and refrigerate up to 12 hours.
