Apple Muffins with Maple Topping

Ingredients:
  • 1 1/3 cup all-purpose flour
  • 1 cup oats, quick or old fashion
  • 1/2 cup granulated sugar
  • 1 Tbsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/2 cup milk
  • 5 1/3 Tbsp butter, melted
  • 1/4 cup Vermont maple syrup, grade B
  • 2 egg whites, slightly beaten
  • 1 cup chopped apples
  • Pecan halves
  • 3 Tbsp confectioners' sugar
  • 1 Tbsp Vermont maple syrup, grade A

Preparation:

Preheat oven to 400° F. Line 12 medium muffin cups with paper baking cups or spray with no-stick cooking spray. Combine flour, oats, sugar, baking powder and ground cinnamon; mix well. In another bowl, combine milk, butter, syrup and egg whites; mix.

Add to flour mixture and mix just until moistened. Gently stir in apples. Fill muffin cups almost full. Top each with pecan halves. Bake in preheated oven for 20 to 25 minutes, or until toothpick inserted in center comes out clean. Cool slightly.

While baking, blend together confectioners' sugar and 1 tablespoon maple syrup until smooth. When muffins are slightly cooled, drizzle over the tops.

Servings: 12 muffins
