In large bowl combine brown sugar, vegetable oil and egg set aside. In small bowl combine milk, baking soda, salt and vanilla. Add milk mixture to sugar mixture alternating with 2 1/2 cup flour. Mix well after each addition. Fold in apples and pecans. Pour into muffin papers in muffin pans and sprinkle with sugar combined with melted butter.
Bake at 325° F for approximately 30 minutes or until done.
