Thaw 1 pastry sheet. Cut the almond paste in half and set one half aside, cut the other half into thin slices and put it on all sides of the Brie cheese.
Wrap the cheese and almond paste in the pastry sheet. Pinch the sides of the pastry sheet using a little water on edges to seal. Place in a pie pan sprayed with a nonstick cooking spray.
Bake at 400° F for 15 minutes or until golden. Serve with crackers.
