Line pie plate with 1 crust. Fill crust with apples; if apples aren't tart enough sprinkle 2 Tbsp vinegar over the top of the apples.
Cover with sugar. Sprinkle with cinnamon and nutmeg. Put pats of butter on top. Wet edges of bottom pie crust; cover with second crust; crimp edges.
Brush top of crust with milk. Cook at 400° F for 40 minutes. Watch edges of crust, you may need to cover edges with foil to prevent from getting too brown.
