Nordstrom's Champagne Vinegarette

Ingredients:
  • 1/4 cup + 1 Tbsp minced shallots
  • 2 Tbsp minced garlic
  • 1/4 cup dijon mustard
  • 1/2 cup white sugar
  • 1 Tbsp salt
  • 1 1/2 tsp white pepper
  • 1 3/4 cup champagne vinegar
  • 1 1/2 quarts canola oil

Preparation:

Place all ingredients in a a food processor or blender except oil. Mix for two minutes. Slowly add oil, allowing it to emulsify. Transfer to storage container.

You can always half the recipe.

Makes: 3/4 gallon
