Omar's Carriage House Potato Chip Encrusted Flounder

Ingredients:
  • 2 lbs medium flounder filets
  • 3 cups potato chips, crumbled
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil

Preparation:

Dredge flounder in flour. Then dip in egg wash (eggs and milk combination), then place in potato chip crumbs.

In a large sauté pan over medium heat add oil. Add flounder to pan and cook until golden brown. Flip, then finish in a 350°s; F oven for 6 to 7 minutes. Serve immediately.
