Orange Salsa

Ingredients:
  • 2 large (Florida) oranges, peeled, pith removed and diced
  • 1 large tomato, seeded and diced - 1 c)
  • 1/3 cup minced red onion
  • 1 Tbsp grated orange peel (I recommend you use organic, if you do this)
  • 1 Tbsp minced garlic
  • 1 Tbsp minced ginger root
  • 1/2 jalapeño chili pepper, minced fine
  • 1/4 Tbsp salt
  • 1 Tbsp fresh cilantro, or coriander

Preparation:

In a bowl combine all ingredients except the cilantro and chill, covered, until ready to serve. Before serving, stir in the cilantro.
