Mint & Caramelized Shallot Salsa
Ingredients:
10 shallots, peeled - thinly sliced
1 Tbsp fresh ginger, grated
1/4 cup fresh mint, minced
1/2 cup minced fresh pineapple
2 Tbsp pineapple juice
1 Tbsp minced Thai red chiles or 1 1/2 tsp minced red serranos
3/4 Tbsp sugar
1 Tbsp soy sauce
2 Tbsp unseasoned rice wine vinegar
Preparation:
Sauté shallots in water until browned, about 10 min. Cool. Mix with the remaining ingredients.
