Ingredients:
- 1/2 cup red bell pepper, seeded - finely diced
- 1/2 cup yellow bell pepper, seeded - finely diced
- 4 Tbsp minced serrano chile, seeded
- 1/3 cup apple cider vinegar
- 1/4 cup finely chopped fresh cilantro
- 2 Tbsp minced shallot
- 2 Tbsp fresh lime juice
- 1 1/2 Tbsp sugar
- 1/4 Tbsp salt

Combine all ingredients.
