In sauce pan, sauté 1/2 cup chopped onion with several cloves of chopped garlic, till blanched. Add basil, pepper and salt (sorry I never measure my spices).
Add 1 10 oz. package chopped spinach well drained. Can use fresh steamed spinach. Cook unil spinach heated thouroughly.
Add ricotta cheese sauce and simmer until thickens.
Tops any pasta, but works best on a small shell type. On occasion, will add lemon juice to cheese to vary the flavor. Enjoy, also great cold!
This is a pasta sauce, that I have made many times for my part-time SAD husband, and we both love it. Hope you do too!
