In a small glass bowl, mix all ingredients together until light and fluffy.
Preheat the oven to 350° F. In microwave cook approximately 15 to 20 minutes: 4 artichokes, trimmed and base cut so they will sit flat.
Remove the chokes by removing the center leaves and scraping with a large spoon. Place them in a square baking pan.
Divide and stuff the chokes with the mixture and sprinkle the tops with 1/4 cup dry bread crumbs and 2 Tbsp melted butter
Add some water to the bottom of the pan and bake for 30 minutes, or until tops are golden brown.
