Soak the beans overnight in cold water. In the morning parboil the beans until the skins crack when pierced with a fork. Cut through the rind of the salt pork to a depth of 1/2 inch, then place the pork on top of the beans. Mix the sugar, molasses, mustard, pepper and salt with one pint of boiling water; pour mixture over the pork and beans. If necessary, add more boiling water to cover beans.
Bake at 300° F or at least six hours and add more boiling water as beans cook to keep them from drying out. Serve with steamed brown bread of Johnny Cake.
