Place beans in a deep pan and cover with water 6 inches above bean level. Let stand overnight. Boil beans and add salt, cumin, allspice, and diced green peppers.
Sauté vinegar, sugar, pepper, onions, garlic, and salted pork in 2 Tbsp of olive oil; add these ingredients to beans and continue boiling. Add the green and red sweet pimentos.
Check a few beans every so often to be sure they are tender (after (about 1 hour boiling). When tender, scoop/drain (about 1 1/2 cups of beans; flatten the beans to make a paste. Add the paste into the pan and stir. Add remaining olive oil.
Cover pan and simmer. Optional: Eat beans with white rice, or simply as a soup Enjoy!
