Broccoli Corn Bake - Microwave

Ingredients:
  • 1 20 oz. pkg. frozen chopped broccoli
  • 2 16 oz. cans cream-style corn
  • 2 eggs, well beaten
  • 1 cup cracker crumbs
  • 2 Tbsp onion, minced
  • 4 Tbsp butter
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 cup cracker crumbs
  • 2 Tbsp butter, melted

Preparation:

Microwave broccoli and drain well. Add corn, salt, pepper, egg, 1 cup cracker crumbs, onion and 4 Tbsp butter to broccoli in casserole dish. Mix 2 Tbsp melted butter with 1/2 cup cracker crumbs and put on top.

Cover and cook 10 minutes on high. Uncover and cook 1 minute 40 seconds on high. Can also be baked in conventional oven.
