Place oleo in heavy sauce pan. Add onions and cook for 7 or 8 minutes. Add frozen broccoli; cook broccoli then remove from heat. Let cool. Add muffin mix, eggs and cottage cheese. Mix well.
Grease and flour pan or spray with non-stick spray.
Bake at 375° F until brown, about 30 minutes. The bread is very moist and freezes well.
