Tomato Broccoli Orecchiette

Ingredients:
  • 1 1/2 cup chick-peas (garbonzos)
  • 1/4 cup olive oil
  • 1 sm red onion, diced
  • 2 Tbsp finely minced garlic
  • 2 cup plum tomatoes, peeled and chopped
  • 1 large head of broccoli, cut into sm florets
  • 1/2 lbs orecchiette or rigatoni
  • freshly grated parmesan cheese

Preparation:

Mix chick-peas with 1 Tbsp of olive oil. Heat remaining oil in large skillet and sauté onion until tender. Add chick-peas and garlic and cook until warmed through. Add tomato and cook 2-3 minutes. Season to taste with salt and pepper.

Prepare pasta. (about 2 minutes before pasta is done, add broccoli. Drain and add broccoli and pasta to skillet; toss to combine. Serve with freshly grated parmesan cheese.
