Honey Drizzled Carrots

Ingredients:
  • 1 1/2 pounds carrots, peeled and diagonally cut into
  •     2-inch lengths (halved if very thick)
  • 1 Tbsp olive oil
  • Salt and fresh ground black pepper
  • 1 Tbsp orange blossom honey

Preparation:

Heat oven to 450° F.

On a large, rimmed baking sheet, add carrots and drizzle with olive oil and season with salt and pepper to taste. Toss until well coated. Place in oven and bake until tender, turning once, about 30 to 35 minutes.

Remove from the oven, drizzle with honey and gently toss to coat.
