Marinated Carrots Recipe #1

Ingredients:
  • 2 lbs carrots, peeled and sliced
  • 1 sm green bell pepper, chopped
  • 1 med. onion, chopped
  • 1 8 oz. can tomato sauce
  • 1 tsp prepared mustard
  • 1/2 cup salad oil
  • 3/4 cup sugar
  • 3/4 cup vinegar

Preparation:

Cook carrots in salted water until just done. Drain and cool. Combine all other ingredients andpour over carrots. Refrigerate. Serve Cold. Much tastier if refrigerated for several days. Keeps for weeks. Serve alone or as part of a salad.
