Marinated Carrots Recipe #3

Ingredients:
  • 2 lbs carrots, peeled and sliced
  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 1 can tomato soup
  • 3/4 cup sugar
  • 3/4 cup cider vinegar
  • 1/2 cup oil
  • 1 tsp salt
  • 1/2 tsp pepper

Preparation:

Cook carrots until crisp tender. Combine soup, sugar, vinegar, oil, salt and pepper and bring to a boil. Simmer a few minutes. Pour hot mixture over drained carrots and stir lightly. Cover and refrigerate.
