Scalloped Carrots

Ingredients:
  • 4 cup carrots, sliced and cooked
  • 1 med. onion, chopped
  • 3 Tbsp margarine
  • 1 can cream soup (cheddar cheese soup)
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1 1/2 cup minced cheese (any kind)
  • 1 1/2 cup Bell's stuffing mix
  • 1/2 cup melted margarine for topping

Preparation:

Sauté onions in 3 Tbsp or less margarine. Combine carrots, onions, soup, salt, pepper and cheese. Place in casserole dish. Make topping with stuffing mix and margarine. Bake at 350° until heated through and browned.
