Coleslaw Relish

Ingredients:
  • 2 medium heads cabbage (about 6 lbs)
  • 3 red bell peppers
  • 3 green bell peppers
  • 6 small Carrots
  • 6 large Onions
  • 1/2 cup salt
  • 3 pint vinegar
  • 6 cup sugar
  • 1 tsp celery seed
  • 1 tsp mustard seed
  • 2 tsp turmeric

Preparation:

Prepare vegetables as for Coleslaw. Add salt; let stand 2 hours. Squeeze out liquid; mix with remaining ingredients and seal in sterile jars.

Servings: 6 quarts
