Wash the mushrooms and soak in cold water for 10 minutes. Drain and slice.
Trim the pork of all fat and cut pork into narrow slices.
Toss with the soy sauce, cornstarch, sugar, pepper, and 1 tablespoon oil.
Cut the ham and abalone into julienne strips. Slice the celery. Heat the remaining oil in a saucepan; fry the ginger 1 minute.
Stir in the water; bring to a boil. Add the pork mixture, mushrooms, celery, ham, salt, and Ac'cent. Cover and cook oyer low heat 15 minutes.
Add the abalone and cook precisely 5 minutes overcooking will toughen the abalone.
