Gazpacho #3

Ingredients:
  • 3 cups vegetable juice
  • 1 medium yellow onion, chopped
  • 2 medium tomatoes, diced
  • 1 green pepper, minced
  • 3 cloves garlic, crushed
  • 1 cucumber, diced
  • 2 Tbsp lemon juice
  • 2 Tbsp red wine vinegar
  • 2 tsp fresh basil, minced (or 1 tsp dried)
  • 1 tsp cumin
  • Dash of hot sauce
  • 2 Tbsp olive oil
  • Salt and pepper, to taste

Preparation:

Combine all the ingredients in a large bowl and chill for several hours.

Serve cold.
