Gazpacho #6

Ingredients:
  • 4 cup Tomato juice
  • 1/2 cup Finely minced onion
  • 1 md Clove garlic, minced
  • 1 md Bell pepper, minced
  • 1 tsp Honey (optional)
  • 1 md Cucumber, peeled, seeded,and minced
  • 2 Scallions, minced
  • 1/2 Lemon, juice of
  • 1 Lime, juice of
  • 1 tsp Tarragon
  • 1 tsp Basil
  • 1/2 tsp Cumin
  • 1/4 cup Freshly minced parsley
  • 2 Tbsp Olive oil
  • Salt
  • Black pepper
  • Cayenne (all above to taste)
  • 2 cup Freshly diced tomatoes

Preparation:

Combine all ingredients. Chill until very cold.
