Gazpacho #7

Ingredients:
  • 3 cups vegetable or tomato juice
  • 1 medium onion, minced
  • 2 medium tomatoes, diced
  • 1 green bell pepper, minced
  • 1 clove garlic, crushed
  • 1 medium cucumber, diced
  • 2 Tbsp lemon juice
  • 2 Tbsp red wine vinegar
  • 1 tsp dried tarragon
  • 1 tsp minced fresh basil
  • Pinch of ground cumin
  • Dash of hot sauce
  • 2 Tbsp olive oil
  • Salt and pepper, to taste

Preparation:

Blend all the ingredients and chill for 2 hours.

Hint: To save time, instead of mincing and chopping the following vegetables, cube them, then blend in a blender or food processor.
