Barbecue Beef Stew

Ingredients:
  • 2 lbs stew meat
  • 3 Tbsp vegetable oil
  • 1 onion, sliced
  • 1/2 cup chopped green bell pepper
  • 1 large clove garlic, minced
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 2 cups beef stock
  • 1 - 16 oz. can tomatoes
  • 1 - 4 oz. can mushrooms
  • 1/3 cup barbecue sauce
  • 3 Tbsp cornstarch
  • 1/4 cup cold water

Preparation:

Sauté onion, pepper and garlic in oil. Add salt, pepper, beef stock, tomatoes, mushrooms and barbecue sauce. Add to crockpot and cook on LOW for 8 to 10 hours.

Mix cornstarch and cold water and thicken before serving.

Serve over hot cooked rice.
