Cornish Hens and Dressing in Wine Sauce

Ingredients:
  • 1 cup Finely chopped onions
  • 1 cup Chopped green pepper
  • 3 Tbsp Bacon drippings
  • 6 sl Fried bacon; crumbled
  • 3 cup White bread cubes
  • 1 cup Chopped walnuts
  • 1-1/2 tsp Salt
  • 1-1/2 tsp Thyme
  • 1/2 tsp Sage
  • 6 Cornish hens
  • 1/2 cup Melted butter
  • 1/2 cup White wine
  • 1 Clove garlic; crushed
  • 1-1/2 tsp Salt
  • 2 tsp Sage

Preparation:

sauté onion and green pepper in bacon drippings. Add bacon, bread cubes, walnuts and seasonings. Stuff hens, place in roaster pan. Combine remaining ingredients; pour in roaster around hens. Bake at 4oo° F for 1 hour; baste occasionally with sauce. Turn off heat and cool hens in sauce for 30 minutes before servings. Servings:
