Blueberry Cobbler #1

Ingredients:
  • 2/3 cup whole-wheat pastry flour
  • 1 1/2 tsp baking powder
  • pinch salt (optional)
  • 2/3 cup low-fat vanilla soy milk
  • 3 Tbsp honey
  • 2 cups blueberries

Preparation:

Preheat oven to 350° F.

Combine the flour, baking powder, and salt. Stir in the soy milk and honey, and mix until smooth. Pour the batter into a nonstick 8-inch square pan. Sprinkle the berries on top.

Bake for 45 minutes or until lightly browned.

Servings: 4 to 6
