Tomato Gravy

Ingredients:
  • 1/4 cup Chopped onion; optional
  • 3 Tbsp Bacon drippings
  • 1 Tbsp Flour
  • 3 Tomatoes; peeled & chopped
  • 1 cup Water
  • Salt & pepper; to taste

Preparation:

Sauté onion in bacon fat. Stir in flour and brown. Add tomatoes, with juice; stir as gravy thickens.

Add water, a little at a time, and cook until gravy is of desired thickness. Salt & pepper to taste. This is also good as a casserole sauce.

Servings: 2 to 2-1/2 cups
