Fig Jam with Honey

Ingredients:
  • 4-1/4 cups honey
  • 2 qt Chopped figs, about 5 lbs
  • 3/4 cup Water

Preparation:

Peel figs, measure and add 4-1/4 cups honey for each cup fruit and let cook slowly, stirring constantly. When thick, pour into jars to within 1/4 inch of top. Put on cap, screw band firmly tight.

Process in boiling water bath 10 minutes. A little sliced lemon or chopped walnuts in fig jam makes it delicious.
