Pesto Chicken Pastries

Ingredients:
  • 1 1/2 cup - 6 oz. mozzarella cheese, shredded
  • 1 1/4 cup chopped cooked chicken
  • 1/2 cup Italian pesto dressing
  • 4 Tbsp chopped drained sundried tomatoes in oil
  • 1 can 8-count refrigerated big buttermilk biscuitsp
  • 1/2 cup shredded parmesan cheese

Preparation:

In a bowl combine mozzarella, chicken, dressing and tomatoes, mix well. Add more dressing if seems too dry. Pat each biscuit into 5-inch round. Place a heaping 1/4 cup cheese mixture in center of each round.

Bring up sides over filling and pinch to seal. Roll and press top-side of pastries into parmesan cheese. Place seam-side down on baking sheet. Bake at 375° F for 15 minutes or until golden brown.
