Emeril's-style Fried Plantains

Ingredients:
  • 4 each ripe plantains
  • Oil for frying
  • Salt
  • Freshly ground pepper to taste

Preparation:

Preheat the fryer. Peel the plantains and slice thinly on the bias. Fry in batches until golden brown, about 2 minutes, stirring occasionally.

Remove from the oil and drain on paper towels. Season with salt and pepper.
