Carrot-spinach Rice Pilaf

Ingredients:
  • 1 carrot, grated
  • 1/4 cup onion, chopped fine
  • 1 Tbsp margarine
  • 1/4 cup brown rice
  • 1 1/2 cup long grain rice
  • 1 2/3 cup chicken broth
  • 2 cup fresh spinach, chopped

Preparation:

Melt margarine over medium - high heat. Cook carrot and onion, stirring frequently until vegetables begin to brown. Add rice and cook, stirring until rice turns golden brown. Stir in chicken broth; heat to boiling.

Reduce heat to low; cover and simmer 20 minutes, until rice is tender and liquid is absorbed. Stir spinach into rice mixture; heat through.
