Cornish Hens Tarragon

Ingredients:
  • 4 Cornish hens; split
  • 1 1/2 tsp Tarragon
Marinade Ingredients:
  • 1/4 cup Olive oil
  • 1/4 cup Lemon juice
  • 1/4 cup Soy sauce
  • 1/4 cup Dry vermouth or chicken broth
  • 2 Cloves garlic; pressed
  • 1 1/2 tsp Salt
  • 1/2 tsp Coarsely ground pepper
  • 1 1/2 tsp Tarragon

Preparation:

Combine marinade ingredients. Marinate hens, covered in the refrigerator, 8 hours. Drain and discard marinade.

Preheat oven to 350° F.Lightly oil broiler rack.

Arrange hens on rack; sprinkle with remaining tarragon. Bake until done, about an hour.
