Mandarin Rock Cornish Hens

Ingredients:
  • 2 (1 1/2 pound) Cornish hens
  • 1/2 cup Water
  • 3 Tbsp Orange juice concentrate,thawed and diluted
  • 2 tsp Fines herbs
  • 1/2 tsp Chicken-flavored bouillongranules
  • 2 tsp Reduced-sodium soy sauce

Preparation:

Remove giblets from hens and discard; rinse hens with cold water. Split hens lengthwise,using poultry shears. Place in a 13x9x2 inch glass baking dish. Combine remaining ingredients in a small sauce pan.

Bring to a boil, reduce heat, simmer 10 minutes. Pour over hens. Cover and chill about 8 hours. Remove hens from orange juice marinade, reserving marinade. Grill over medium coals or broil 15 minutes on each side or until done, basting frequently with reserved marinade.
